In a large, heavy saucepan combine the sugar, salt, baking soda, and buttermilk. Bring to a boil quickly, stirring constantly, until mixture turns a creamy beige (about 210°). Add the butter and pecans and cook over medium heat, stirring frequently, to the soft ball stage (234° to 240°). Remove the pan from the heat and add the vanilla. Beat with a spoon until the mixture loses its gloss. Drop into mounds on waxed paper, working as quickly as you can, since the mixture thickens fast.
